Roll cages serve many purposes in racecars, with the main one being a safety mechanism to preserve the roof from collapsing in the event that the car were to roll, thus protecting the driver. A roll cage also serves as a bracket to attach a dedicated racing harness, as well as nitrous oxide canisters... if that's your thing.
Installing a bit of scaffolding in your car's interior might seem simple enough, but there are many things to take into consideration if you want to do it properly. After all, if it's safety you're after, you will want to pay attention as a roll cage can actually be dangerous if not installed correctly.
